Mango/Banana Ice cubes

Mango/Banana Ice Cubes
4 serves of 3 ice cubes each (1.5 pt each)

1 banana (1-1/2 pts)
1 mango, the flesh chunks (~3 pts)
2 TB soy milk

  1. Cut up banana and mango into a saucepan.
  2. Add 2 TB soy milk
  3. Bring mixture to a gentle boil. Make sure to constantly stir.
  4. When the fruit gets soft mash with a fork.
  5. Place mashed fruit mixture into ice cube trays
  6. Freeze for at least four hours
  7. Pop out and enjoy.
