Mango/Banana Ice Cubes
4 serves of 3 ice cubes each (1.5 pt each)
1 banana (1-1/2 pts)
1 mango, the flesh chunks (~3 pts)
2 TB soy milk
- Cut up banana and mango into a saucepan.
- Add 2 TB soy milk
- Bring mixture to a gentle boil. Make sure to constantly stir.
- When the fruit gets soft mash with a fork.
- Place mashed fruit mixture into ice cube trays
- Freeze for at least four hours
- Pop out and enjoy.
