Tofu marinara sauce w/ rice noodles

Tofu Marinara Sauce w/ rice noodles
1 serve w/ noodles ~6pts.


Tofu marinade
150g firm tofu or tempura sliced into thin strips
pasta seasons–basil, oregano, garlic
1 tsp olive oil

1/4 of onion
3 cloves of garlic
4 mushrooms sliced
1/3 of a zucchini
1/2 chili diced
1 tomato diced
1 can of peeled whole tomatoes

Saute onion, zuchini, garlic, mushrooms, chili and fresh tomato
Add in seasonings (pasta seasoning, salt/pepper)
add in can of whole peeled tomatoes
Let simmer
It made about 3 serves for me…unless you’re a sauce junkie 🙂

Cut into think strips or thinish chunks
Put into a tupperware container with olive oil and seasoning
Let marinade overnight

In a skilled fry up tofu with or without oil
Add marinara sauce
place of 1 serve of rice noodles..cooked of course!
