Grilled Eggplant Feta Wraps
Makes 20 rolls–about 10 serves
2 large eggplants, cut thinly lengthwise
1 large chilli, finely chopped, desseeded or not
large bunch of mint finely chopped
1 lemon juiced
1. Preheat stove top griddle or BBQ–better tasting
2. Cook eggplants for about 2 minutes per side
3. Crumble feta into a bowl and stir in chilli, mine and lemon juice.
4. Grind in pepper to taste
5. Add a heaping teaspoon to the 1/3 of the the eggplant on one end.
6. Roll up and serve
