Gingery Stir Fried Veggies

Gingery Stir Fried Veggies
2 big serves or 3 medium/smallish ones

p10101981/2 onion chopped
4-5 garlic cloves pressed
good heaping tablespoon of ginger finely diced
15-20 green beans chopped up
1/2 carrot into thin slices
1/2 zucchini into medium slices
8-10 oyster mushrooms or any other mushroom, whole
1/2 capsicum, red pepper, chopped


3/4 c. of chicken or veggie stock–I just use a powder and mix with water…this is in lieu of oil
Dash of soy sauce

In hot skillet add onions, garlic, ginger and a little of the stock
Then add in carrots and green bean with more stock. Cover for about 2-3 minutes
Add in the capsicum and a little more stock. Cover for about a minute
Add zuchinni and mushrooms, add rest of stock. Dash a little soy sauce over the top. Cover and cook for about a minute.
Uncover and cook for about 2-3 minutes..try not to over cook the veggies.
