Lentil Soup for the Soul
3 servings


1 carrot chopped
1/2 onion chopped
1/2 of a capsicum
1 1/2-2 c. of raw pumpkin de-skinned and chopped into small chunks
2 tsp of butter

1000ml of water/vegetable stock
2 large cans of lentils drained
3-4 cups of fresh spinach

1. In a large saucepan add all the veggies and butter/ghee/olive oil. Saute
2. Add in the water/stock and boil vegetables until they are soft
3. Add in the two cans of drained lentils and fresh spinach
4. Take 1/3 of the mixture out and blend down with a blender, hand blender, or food processor
5. Add back into mix
