Marinara Sauce
4 serves


2 tsp. Olive oil
1 small onion, diced
4 cloves of garlic, pressed
1 small capsicum (red pepper), diced
1/3-1/2 of a zucchini, diced
4-6 mushrooms chopped
1/3-1/2 of a chili, diced
2-3 tomatoes, diced
2 cans of stewed tomatoes, juice included
2 TB of tomato paste

p10105781. In a large frying pan add olive oil and heat
2. Add in diced onions, garlic…saute…I added a bit of water during this process.
3. Add mushrooms
4. Add capsicum and saute
5. Add chili
6. Add zucchini
7. Add fresh tomatoes
8. Add two cans of stewed tomatoes
p10106009. Add two tablespoons of tomato paste
9. Simmer on super low for about 2-3 hours
