Butterscotch Coconut Cookies
4 dozen


1 c. butter
1 c. white sugar
1 c. brown sugar
2 eggs
1 TB vanilla
1 tsp baking soda
3 c. flour
1 c. shredded coconut
12 oz of butterscotch chips or any chocolate chip would do

1. Preheat oven to 350/175
2. Mix butter and sugars together
3. Add in eggs
4. Mix in vanilla
5. Add in coconut
6. Mix in flour and baking soda
7. Add in butterscotch chips


These babies were flown in straight from America.

8. Place TB fulls on a greased or lined cookie sheet–I am not neurotic about what they look like. But if you’re neurotic then shape them into balls. Sometimes it’s actually better–if you wanting balls–to place the dough in the fridge for about 30-45 minutes so that they’re easier to form. I don’t have enough patience.

9. Bake 12-15 minutes or until they get golden brown in colour
10. Let them cool..and you’ll die when you eat them, casue they’re amazing

‘Mish, what did you bake?’
‘Coconut Butterscotch cookies’
‘I don’t like coconut or butterscotch’
‘Well then you don’t have to eat them. But you know that if I make them they’re amazing’
(gets cookie)
‘Mish, these are amazing!’
‘Told you so!’
