Gluten Free Pancakes
8 smallish pancakes

1/2 c. of rice flour
1 1/4 – 1 1/2 c. of milk–I used rice milk
1 egg
1 TB cinnamon
1/2 tsp salt
1/2 tsp. xantham gum
2 tsp. baking powder–gluten free

1. Get skillet or large frying pan warm–medium/heat
2. Mix/Whish everything together
3. Spray or add about 1 tsp. of oil to pan
4. I used about 1/4 c. batter per pancake
5. Top with whatever you’d like. I stewed 1 apple and topped w/ 1 TB of peanut butter and 1 TB of yogurt! YUMMY!
