Corn Bread (gluten/dairy free)

2 1/2 c. of rice milk
2 TB of white vinegar
3 c. of stone ground cornmeal
1 tsp. salt
1 tsp. baking soda
3 eggs
5 TB vegan/non-dairy spread

1. Preheat oven to 450/230 degrees
2. Melt down non-dairy spread
3. Beat in eggs
4. Add cornmeal, salt, baking soda, milk and vinegar
5. Pour into a greased pan
6. Bake for about 30-40 minutes, until firm in the middle
