Berry Topped Pancakes

Berry Topped Pancakes
3-4 pancakes

Fruit Compote

1 c. frozen blueberries
1/2 c. frozen raspberries
1/8-1/4 c. of water
1 TB sweetener or sugar


1/4 c. rice flour
1/4 c. corn flour
2 TB corn meal
1 egg
1/2 c. hemp milk (soy, rice, regular would work)
1 tsp. baking powder
1 tsp. cinnamon
1 TB sweetner or sugar

Fruit Compote
1. Add everything together of a medium-high heat

1. Mix everything together
2. Heat a griddle or frying pan over a medium heat and add 1/4 c. of the batter at a time
3. Heat for about 2-3 minutes then flip over
4. I spread about 1/2 of a TB on each pancake and then covered with about 2-3TB of the fruit compote
