Skyscraping Beautiful Meatballs

I first want to say thank you for all of your amazing posts on my ‘coming out’ with my secret. I really do appreciate from the bottom of my soul how much you all care for me. Today was a crazy day and I kept repeating to myself…I DO NOT HAVE TO SUFFER ANYMORE.

Instead I am here to enjoy life.

This started off with wondering if I could EVER do this!


They look honestly like spiderman! FUN! I then went to the ‘Every Woman Expo’ with one of my classmates…Auds.

I always become good friends with short people..any reason why? We pottered around the booths.

Then I came home and did a quick cardio sesh at the gym and 10 minutes of abs, legs, arms. Because I had to crank out a home-cooked meal for my staff. Spaghetti and Meatballs!
3-Meat Meatballs
(serves 4-5)

6oz ground pork
4oz each of ground beef and ground lamb
handful of fresh basil
1/4 of an onion diced thinly
1 tsp. cinnamon


1/2 c. of gluten free bread crumbs or just regular bread crumbs
1 egg
1 TB Worcestershire sauce
2-3 TB of red wine

You can make this all in one go. However, last night I did the first lot of the ingredients in a bag and let it marinade overnight.


The combine with the bread crumbs, egg, sauce, and red wine.
Shape into golf-ball sized pieces and place in a pre-heated oven at 200/400 for 25-30 minutes


I found myself lusting after the cake I made last night, but realised that I didn’t have to binge to enjoy it. So I just simply had a few bites and threw the rest of it away. I didn’t want it. The birthday girl didn’t want it…so you know what…I just threw it away.
I enjoyed my day. I bought new workout clothes. My meatballs worked out fabulously. I went to church and it was amazing. And to TOP it OFF..I got to skype with Roni.

    Honestly, that pasta looks wonderful! I can’t wait to find some good gluten free bread crumbs when I get back to the states! I have been making my own here, which are fine too. I’m glad you had a wonderful day! You so deserve it. 😉

    Made with regular beef? Meatballs yes, meatloaf no. Except for the Buffalo Chicken Meatloaf from the Biggest Loser cookbook. But maybe that’s because it’s ground chicken.

    Did you try the eyebrow threading? They’ve opened up a booth at our local mall and I’m curious but not enough to sit out there where everyone can see me!

    Henna tatoos are so fun. I love them and the beautiful designs that go in them. I really want to try threading. They just opened a place at our mall so I might give it a go tonight while Hunni gets a hair cut.

    I used to love meatballs especially homemade. I dont’ usually like vegetarian ones but Trader Joes makes great one for me. I used to love buffalo chicken meatloaf. It was such a fun recipe and it even tastes good cold.

    I’m a veggie, so I don’t do a meatloaf, per se, but I have experimented with a veggie loaf that my meat-eating husband actually likes, so I’m happy with that:-).

    Michelle – I wanted you to say that I just went and read your post from yesterday. I loved it and love your honesty. I have had the same experiences and realized as you did that admitting what is hard for you is very healing.

    Great job handling that cake!! We don’t do ground beef so no meat loaf around here.

      Yeah I don’t normally eat ground beef either….I want to make it with chicken. I think it would be awesome. And thank you for the comment about the earlier post. I appreciate all that you have written and it’s bloggers like yourself that have enabled me to write that.

    I just made an all-lamb meatloaf this week, complete with fresh mint baked inside. It was delicious! I don’t eat a whole lot of meat, but we bought this from a local farmer, so I gave it a shot. Totally worth it.
